We often call breakfast the most important meal of the day. It gives us the fuel we need to get us through the day. If we often skip it because we run out of time, it’s good to plan ahead and stock all of the ingredients we’ll need during the week. Here are five plant-based breakfast ideas that are a staple and kid favorites in plant-based households.
QUICK HEARTY WHOLE WHEAT BANANA PANCAKES
These pancakes from The Viet Vegan blog, are very easy to make, kids love them and you’ll serve them within minutes. You can use all those overripe bananas that are waiting in your kitchen to be used. If you have ripe peaches, you can blend them as a smoothie and serve it as a sauce. Or if you love nuts, blend almonds, cashews, or walnuts and sprinkle them over the pancakes.
FILLING AVOCADO TOAST
I often forget how much I love avocado toast. It’s so easy to make plus avocados have an abundance of fiber and even more potassium than a banana. If you use spelt of whole-wheat toast, you’ll get even more fiber. I often just mash the avocado and spread it on toast but here’s a recipe by Simple Vegan Blog that will blow your mind by how flavorful it is, not to mention nutritious.
PROTEIN-BOOST TOFU SCRAMBLE
I never tried tofu scramble before I went vegan. Not only that, I never even tried tofu before. Yikes. Tofu scramble is a staple in our house now. It’s nutritious, versatile, and quick to make. In just 15 minutes you’ll have a meal that will give you the energy to start your day right. Adding black salt gives the dish an eggy flavor. This recipe by The Spruce Eats also contains spinach and mushrooms but you can add any vegetable you like.
CREAMY GOLDEN MILK TURMERIC OVERNIGHT OATS
The best thing about this recipe by The Colorful Kitchen is that you can make it the evening before and simply enjoy it at breakfast. Just blend the ingredients and refrigerate the mixture overnight. No hassle in the morning. You can also take it with you if you’re running late. Not that I know anything about that. Nope.
FLAVORFUL PUMPKIN MUFFINS
This is our favorite fall breakfast recipe. We see pumpkins everywhere so why not make pumpkin muffins? Pumpkins give a sweet flavor to the muffins and you can make them using just one bowl. That’s perfect, no mess! Bake these in the evening and enjoy them in the morning. Yes, you’ll have to gather all your strength to not eat them right away, if you want to enjoy these healthy and delicious muffins for breakfast. But it’s worth it.
